Fish carpaccio

Ingredients :
400g lean fish fillets (sea bass, sea bream, hake...)
2 limes
2 ripe tomatoes
2 spring onions
Mixed herbs
Salt & pepper

Recipe :
Slice fish into 1cm slices.
Marinate for an hour in a mixture of lemon juice, salt, pepper and herbs.
Peel and seed tomatoes, then chop as small as possible.
Snip spring onions into small lengths.
Arrange fish in the middle of each plate, surround with tomatoes, then sprinkle with onions.
