Ingredients :
8 slices smoked sole
500g sole fillets, cut into 5cm pieces
Lemon balm
1 green pepper, cut into 4cm pieces
1 red pepper, cut into 4cm pieces
12 mushrooms, sliced
Oil
Recipe :
Cut each slice of smoked fish in half lengthways, then in half widthways.
Roll each piece round a piece of sole and a lemon balm leaf.
Skewer fish, alternating with peppers and mushrooms.
Brush with oil, then grill or barbecue.
