Ingredients :
400g mixed salad leaves, e.g. mache, endive, rocket, curly leaves etc.
4 squares dark chocolate, with at least 70% cocoa solids
100g parmesan cheese
2 tablespoon olive oil
1 tablespoon balsamic vinegar
Salt & pepper
Recipe :
Wash and spin salad, then arrange in a salad bowl.
Shave parmesan and sprinkle amongst leaves.
Just before serving:
Drizzle with olive oil, season and drizzle with balsamic vinegar.
Thinly slice chocolate and add to salad.
Toss and serve immediately.
Advice :
Do not let the vinaigrette soak the salad or ingedients too much, they should remain crisp and fresh.
