Ingredients :
3 tablespoon olive oil
4 red peppers
5 big clove garlic, finely chopped
2 teaspoon fresh thyme
1 tablespoon sherry vinegar
Salt & pepper

Recipe :
1. Wash, de-seed and slice peppers.
2. Heat oil in a pan over a high heat.
3. Add peppers, lower heat and brown for 10 to 15 minutes, stirring regularly.
4. When peppers are tender, add garlic and thyme, then cook for a further couple of minutes.
5. Add vinegar and mix well.
6. Pour into a serving dish and serve.


Advice :
Also great cold!
This salad goes very well with a Tavel wine.
