Turkey with cashew nuts

Ingredients :
300g turkey
2 teaspoons starch
100g carrots
100g celery
1 onion
1 clove garlic
3 or 4 green chillies
2 tablespoons oil
30g cashew nuts
1 tablespoon brown sugar
1 tablespoon chopped chives
1 tablespoon chopped parsley
125 ml chicken stock
2 tablespoons Nuoc Nam (fish sauce)
2 tablespoons soy sauce
Salt, pepper
A few coriander leaves

Recipe :
Dice the turkey and coat with starch.
Wash the broccoli and blanch for 2 minutes in boiling water. Strain and put to one side.
Wash and peel carrots and celery, then slice.
Cut chillies in half, take out seeds and chop.
Chop the onion and garlic, then brown them in a pan. Add turkey, fry briefly over high heat to seal, turn down heat slightly and start adding vegetables.
Cook the carrots, onion and garlic, then add the stock, fish sauce and saoy sauce and leave to cook for 15 minutes.
Add the broccoli and cashew nuts and cook for a further 8 minutes. Add herbs.
Serve with basmati rice, a few coriander leaves and Chinese beer.
