Scallop and mango salad


Ingredients :
12 scallops
100g mache (lamb`s lettuce) sliced
1 head chicory
1 mango
Juice of 1 lime
20g salmon roe
100ml olive oil
1 bunch chives, chopped
Sea salt
Salt & pepper
Recipe :
Prepare and wash the scallops, cut into five or six strips each and arrange on a plate.
Peel and dice mango.
Mash into a puree.
Add lime juice, olive oil, salt and pepper.
Stir well and put to one side.
Brush scallops with marinade.
Arrange a bed of mache, chicory and chives on each plate.
Add sliced scallops and mango sauce, arrange salmon roe on top.
Sprinkle with sea salt.

Provence: Bandol
Languedoc Rousillon: Tavel
