Salmon blinis

Ingredients :
for the batter:
200g wholemeal flour
150g buckwheat flour
75cl milk
3 eggs
25g yeast
Salt and pepper
3 tbsp oil
2 tsp sugar
100g melted butter

6 slices smoked salmon
Philadelphia to garnish
chives


Recipe:

Warm the milk in a pan for a few minutes.
Mix the yeast and 15cl milk.
Separate the egg whites and yolks and beat the yolks. In another bowl, mix the flour, yeast, salt, sugar and mix. Add the egg yolkd and 60cl milk bit by bit, until you get a thick but fluid mix.
Set aside for 45 minutes.
Whe the batter has risen, whip the egg whites and add.
In a small oiled pan (8cm), add 2 tsp batter and cook for 2-3 minutes on each side.
Mix the chives, 2tsp milk and Philadelphia.
Garnish the blinis with the mixture uing a spoon, add a slice of smoked salmon to each one and top with dill.


Advice :

Delicious with vodka or cider
